Advice on Web Server Logs

Hi I imagine a lot of people on this list work for companies concerned with the web, and I have a question regarding your web server logs. When you record your web server logs, do you save them in a file or in a DB? If you don't mind I would appreciate hearing the whole life of your web server log. i.e save to disk, analyse, put analysis output in DB, etc....
